Ingredients That You’ll Need:

  • Cooked Chicken Breast: You’ll need 1-1 ½ pounds of cooked chicken breast, shredded or chopped. Rotisserie chicken can be used instead.
  • Extra Virgin Olive Oil.
  • Baby Portobello Mushrooms:  Also known as baby portobello mushrooms.
  • Broccoli Florets: approximately 4 cups total. Baby broccoli florets are ideal, but regular florets can also be used; if using larger florets, cut them into small, bite-sized pieces.
  • Fresh Garlic: Mince or run fresh garlic through a garlic press.
  • Spiced: with salt & pepper Basil, oregano, and thyme, dried.
  • Mozzarella Cheese: Mozzarella About 8 oz. shredded mozzarella, split
  • Chicken Broth: I use low-sodium chicken broth.
  • Heavy Whipping Cream: 1/2 cup cream is required; half-and-half can be substituted, but the sauce will not be as thick.
  • For garnish: use chopped fresh parsley.

 How To Make Chicken Broccoli Cheese Casserole?

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside a 9×13 baking dish that has been lightly sprayed with cooking spray.
  2. In a large 12-inch skillet placed over medium-high heat, heat the olive oil. Cook for 2 minutes in the heated oil with the mushrooms.
  3. Stir in the broccoli and garlic; season with salt, pepper, basil, and oregano, and simmer for 3 minutes, or until the broccoli begins to soften.
  4. Arrange cooked chicken in a baking dish, shredded or chopped.
  5. Remove the mushroom and broccoli combination from the pan and place it on top of the chicken. Place aside.
  6. Return the skillet to medium-high heat. In a small mixing bowl, whisk together 1 tablespoon chicken broth and 2 teaspoons cornstarch until pasty. 
  7. In a heated skillet, mix 1 cup of chicken broth, cornstarch paste, heavy cream, thyme, salt, pepper, half of the shredded mozzarella, and parmesan cheese.
  8. Remove from heat and pour sauce over chicken mixture in baking dish; stir and mix with a spoon until completely incorporated. Top with the remaining mozzarella cheese.
  9. Bake for 15 minutes with the baking dish covered in foil. Remove the foil and bake for another 9 to 10 minutes, or until the cheese is melted and the top is light golden brown.
  10. Remove from the oven and set aside for 5 minutes. Garnish with red pepper flakes, parmesan cheese, and parsley if desired. Serve.
