What Are Ina Garten Zucchini Pancakes?

Ina Garten Zucchini Pancakes are just like any traditional pancakes recipe but with zucchini. You start by making the batter which is made of eggs, all-purpose flour, baking powder, salt, black pepper, and grated zucchini.

Then, heat your skillet with butter and oil to avoid sticking, and start cooking the pancakes.

The last step is to place the cooked pancakes into a preheated oven (300°F) for 5 min then leave them in the oven until serving. This way can last warm for up to 30min.

What is The Secret to Making Perfect Ina Garten Zucchini Pancakes?

Check the freshness of your baking powder: using old or expired baking powder, you’ll end up with flat pancakes, not light and fluffy ones. So, the secret behind fluffy pancakes is the freshness of the baking powder.

Whisk your dry ingredients to avoid big lumps: Mix the batter well and not over mix, just make sure to remove de-lump your dry ingredients with a few flicks of the whisk.

Rest the batter: Let the batter rest for 15 to 30 min before heating the skillet. this time helps the flour absorb the liquid, allowing some of the more stubborn lumps to take care of themselves.

Use a big skillet or, better yet, a griddle: Large skillet is better than a small one, it helps you flip the pancakes easily and you can cook more than one at the same time.

Wipe out the pan between batches: Wiping the skillet for every pancake is too much, but at least try to wipe it once you notice that the butter is burned. To avoid any off-tasting or burned bits.
