What Kind Of Potatoes To Use?

Actually, you can use any variety of potatoes, including red-skinned, russets, Yukon golds, and sweet potatoes, for roasting.

To Peel or Not to Peel? When roasting potatoes, peeling them is optional. The skin on a russet or Idaho potato adds so much flavor, and I just love the way the red skins look and stand out.

Before baking, pierce small potatoes with a fork or knife to release steam or cut them in half if they’re really small.

  • Heat the oven to 425°F.
  • Scrub the potatoes (do not peel them). Cut the dice into 1″ cubes.
  • Soak potatoes in cold water for up to 1 hour if time allows. (This removes starch and produces a fluffier potato.) If necessary, drain and dry the potatoes.
  • Toss the potatoes, olive oil, herbs, and seasonings together.
  • Bake for 30-35 minutes, or until browned and tender, on a baking sheet.

This Jamie Oliver Roast Potatoes recipe is great because the potatoes can be roasted at almost any temperature and they take much less time to bake than Baked Potatoes. Higher temperatures, in my experience, produce the best balance of crispiness on the outside and fluffiness on the inside.

What Temperature To Roast Potatoes?

Most of the time, I roast potatoes at 425 degrees Fahrenheit because I find that this temperature produces the best exterior crispness. Potatoes can be cooked at a lower temperature if necessary, depending on the other dishes currently being baked (but you may need a longer baking time).

The times given are for potato cubes measuring 1 inch:

  • Bake for 45-50 minutes at 350°F.
  • Cook at 375 degrees for 35 to 40 minutes.
  • Cook for 30 minutes at 400 degrees Fahrenheit.
  • Bake for 20-25 minutes at 450 degrees Fahrenheit.

How To Store Roast Potatoes Leftovers?

You can keep leftover roast potatoes in the refrigerator for up to 4 days if you allow them to cool to room temperature first, then transfer them to an airtight container.

To reheat leftover roast potatoes, you can use either a frying pan or an oven. As hashbrowns, in casseroles, or in a frittata, they’re a great time saver when you’re making breakfast hash.

Are Roast Potato Leftovers Freezable? Yes! They don’t seem like the type of thing that would freeze well, but they do! To reheat, I store them in a freezer bag and then either bake them (or pop them into a toaster oven) or heat them up in a frying pan over the stove. For a quick and easy weeknight dinner, I just throw them in the pan with some oven-baked chicken breasts.
