  1. Place the oven rack in the lower-third position then prepare your oven by preheating it to 325°F.
  2. Line a foil on an 8-inch square pan and lightly grease it with cooking spray then set aside.
  3. Melt the butter and chocolate in a medium heatproof bowl over barely simmering water, stirring constantly until smooth, alternately, you can microwave it in 30-second intervals, stirring every 30 seconds.
  4. Remove from heat and whisk in the sugar until well combined.
  5. Set aside to cool for about 10 minutes, keep in mind that the eggs will scramble in the next step if the mixture is too warm.
  6. Whisk in the eggs, egg yolk, and vanilla, continue whisking for one minute, until completely smooth and glossy.
  7. Then add the flour, cocoa powder, and salt then whisk until just combined, stop whisking as soon as you do not see any streaks of dry flour as you do not want the batter overmixed.
  8. Set aside 1/3 cup of batter, and spread the remaining batter evenly into the prepared pan, it will be a thick batter.

Make the filling:

  1. Beat the cream cheese and sugar together in a small bowl until smooth, you can use a handheld mixer, whisk or even a spoon to do this.
  2. Add the vanilla and egg yolk and mix until smooth and creamy.
  3. Distribute spoonfuls of cheesecake filling evenly over the brownie batter, then drop spoonfuls of reserved brownie batter in the empty spaces between the cheesecake filling.
  4. Gently swirl the dollops together with the tip of a sharp knife.
  5. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached, keep in mind to rotate the pan halfway through baking.
